Steven Lolicato

My culinary journey began on my grandparents’ farm in Swan Hill, Australia. Growing up amidst the traditions of my Southern Italian heritage, I spent my childhood holidays picking peaches & asparagus, curing salami and stomping on grapes—a life lived strictly by the seasons. This deep connection to the land taught me that exceptional food begins with a profound respect for the ingredient.

My professional path led me from the iconic Melbourne institution Café e Cucina to the high-pressure kitchens of London, followed by senior roles at some of Australia’s most prestigious "Hatted" and 5-star venues, including Cumulus Inc. and No. 35 Sofitel on Collins and The Carlton Wine Room.​

At 30, I returned to Europe, immersing myself in the Mediterranean produce of Mallorca and the demanding seasonal pace of the French Alps. This journey eventually brought me to The Netherlands, where I sharpened my technical discipline in a 2-Michelin-star environment before establishing myself in The Hague.

With 10 years of experience in the Dutch hospitality scene and over 23 years in hospitality all together, I now lead Edge Horeca. I combine the grit of the farm, the innovation of Melbourne, and the precision of professional kitchens to ensure your vision is both creatively ground-breaking and operationally flawless.
